things i like thursday: food edition

Happy Thursday everyone. I hope yours is going well. Mine started off a little painfully. Looks like the typical pregnancy leg cramps have arrived. Why they decided to show up at 1am is beside me. Thank you, Mother Nature, for that rude awakening. Literally. Today I'm going to write about a few things I like when it comes to food. I love food.  I seem to have a problem with it lately, because my mouth takes in far more than my brain knows I should. Regardless of that, I am going to share a few of my most recently used recipes and one I'd like to try in the near future. These have all been tested by yours truly, and I know food. Trust me.

I will say that I make my own little changes to most of these recipes, but generally, I stick pretty close to the original if it is good enough. The first three, I've made more than once, so they are part of my arsenal now. Ideally, I will get to the bread recipe before I die. Hopefully not from eating too much. If you're looking for new recipes, try these! They are easy.

Beer-Braised Beef and Onions

This is my go-to slow cooker roast recipe, and I love me some roast. My whole crew does, so I cycle it in about twice a month. Don't be afraid of the onions. I have a big onion hater in my family but they cook down and carmelize so much, you don't even realize you are eating onions. I promise you. The only changes I make are using two small roasts instead of one, adding some garlic powder when seasoning the meat, and about a 1/4 cup of red wine to the liquid. Yes, I mix beer and wine like an eager high school party hopper. It's good! Read the recipe here.


Marlboro Man Sandwich

This recipe comes from one of my favorite recipe sites, The Pioneer Woman Cooks. It's awesome. There are so many great things to choose from. This is our family favorite though, so far. Mostly because Erik likes it so much. He even likes it without the onions because the meat is so flavorful, but he has no idea what special element the onions add to the depth of flavor. Beef Pozole

There are so many different ways to make pozole, this is the only one I've used, and I'll stick to it for now because it meets my criteria for recipes. It's relatively quick and it tastes really good. I probably shouldn't have written this post when I'm so hungry, because after this I will probably eat way too much for breakfast and hate myself. Anyway, this recipe is one my dad found from Mexican Made Easy and he asks me to make it about once a month. I happily accept and I'm almost ready to make it again in the next few weeks. Garlic-Rosemary Flatbread

Picture me rollin'....dough? (Hopefully that hilarious reference isn't lost on absolutely everyone who reads this.) Okay, so I will admit I am intimidated by bread recipes. I have never tried one. I love bread, but I am new to baking and doughs frighten me. Maybe I can get an experienced bread baker to help me out one day. Until then, I'll just drool over all the delicious bread photography I see and continue to think that maybe its for the best. I eat enough bread as it is. But this looks good, right?   1. haha, love the food. and i just gave birth in june my dr told me not to point my toes straight when i stretch as that causes leg cramps. and she was so dead on I stopped doing that and didnt have any leg cramps thanks goodness. can't wait to see more of your post about foods. i got hooked on hooters ribs and let me tell u i bribed anyone that would take me. I have since calmed down.
